The Briliant blue FCF is a colouring substance that is used to improve the food colouring. Its universal code is the number Ε 133. It dissolves in water and the solution has its higher absorbance in 620nm. Its chemical name is a-[4-(N-Ethyl-3-SulfonatoBenzy1 Amino)Pheny1]-a-[4-(N-Ethyl-3-Sulfonato Benzylamino)Cyclohexa-2,5-Dienylidene] Toluene-2- Sulfonate.

The green egg's dye is a mixture of the dying substances Yellow/ Tartarizini E102 and Blue/Brilliant FCF E 133.

Τις τελευταίες όμως δεκαετίες σύμφωνα με τις προσταγές της Ε.Ε. απαγορευτηκαν και είναι πλέον φυσικές χρωστικές τροφίμων, οι οποίες είναι μή τοξικές και κατάλληλες για τρόφιμα. Η καρμοϊσίνη είναι μια κόκκινη συνθετική χρωστική. Συνήθως βρίσκεται και ως άλας δινατρίου. Έχει διεθνή σήμανση με τον αριθμό Ε 122. Η χημική της ονομασία είναι Disodium 4- Hydroxy -3-(4-Sulfonato-1-Naphthylazo) Naphtylene-1-Sulfonate

Tartazine is a synthetic yellow dye. Its universal code is Ε102. Its chemical name is Tri-Sodium 5-Hydroxy-1-(4-Sulfonato Phenyl-4-(4-Sulfonato Phenylazo) Pyrazole-3-Carbaxylate.
